Unico Zelo is an innovative winery located in the Adelaide Hills, established by the dynamic duo Brendan and Laura Carter. The couple launched Unico Zelo fresh from university in 2014, with a focus on producing Italian-inspired, textural, and site-expressive wines. They are known for working with both local grapes and those sourced, aiming to showcase new varieties and transform less celebrated sites into sources of unique wines.
They are also the first winery in Australia to be B-Corp Certified, Unico Zelo (meaning “unique zeal”) has a focus on holistic sustainability and regenerative farming while focusing on varietals that will work with the terroir, requiring less human intervention.
Don't expect any sweetness here, it's bone dry with refreshing acidity. Bursting with potpourri, ginger and lime aromatics, a gorgeous chalky texture, with golden apples, white peach and pineapple.
