Jean-Marie Rimbert sources fruit from organically certified old vines exceeding 50 years of age planted at high elevation. The winemaking process employs carbonic maceration with whole clusters or a gentle three-day maceration after destemming; spontaneous fermentation with native yeasts and ages in stainless steel and enamel-lined concrete tanks. Bottled with minimal sulfur addition, this wine reflects Rimbert's low-intervention philosophy and the distinctive mineral character imparted by Berlou's unique schist terroir.
The nose presents tart red cherry, wild strawberry, violet, rose petals, and white pepper with earthy schist minerality. On the palate, crushable red fruit flavors balance with bright acidity, gentle tannins, and savory herbal notes.
