Born and raised in Champagne, Charles Dufour converted his 6ha farm to organic practices in 2013. To limit the use of harmful chemicals like copper, he has adopted biodynamic preparations like herbal teas to limit vineyard disease. With illustrious neighbours like Cédric Bouchard, this little corner of the Côte des Bar proves they can compete with the region’s more famous sub-appellations. In fact, Charles’ Bulles de Comptoir cuvée was the house Champagne at Noma. Each vintage features a different illustration, adding to its charm and anti-establishment aesthetic.
Part of the wine comes from a perpetual reserve started in 1982, blended with the fresh 2022 harvest. This gives both energy and depth in the glass. The grapes are pressed directly, then the juice ferments in oak with native yeasts and goes through natural malolactic fermentation. After 18 months in barrel and tank and 14 months in bottle on its lees, it is released as an extra brut, with very low dosage.
Persistent bubbles, citrus and green apple notes, hints of white flowers, brioche and almond, and a dry, mineral finish.
