This area, known as the Coteaux Sud d’Épernay, lies between the Vallée de la Marne and Côte des Blancs and combines clay-marl soils with deep layers of chalk. Pinot Meunier performs especially well in the clay-rich vineyards around Moussy, developing ripe orchard fruit while maintaining freshness and mineral lift. Chardonnay from nearby Pierry adds citrus, structure, and finesse to the blend. Didier began moving the estate toward organic farming while building a reserve-wine program designed to add depth and consistency across vintages. “Joyeuse,” meaning joyful, is assembled from both current-vintage and reserve wines and spends several years aging on its lees. That extended cellar time develops pastry and honeyed complexity while preserving the lively character of the fruit.
