Phelan Farm encompasses the lessons of a life in wine and the vision of a vineyard intertwined with nature. The roots of Phelan Farm stretch back to the founding of the Phelan family homestead a few miles from the Pacific on Steiner Creek in 1851, just after California became a state. Inspired by his land’s potential to grow great grapes, Greg Phelan planted Chardonnay and Pinot Noir vines on their own roots in 2007, choosing four sites within the farm best suited to viticulture. Phelan Farms winemaking philosophy is very simple. Add nothing and remove nothing. All wines are made with natural yeast. The wines do not see any sulphur (in the vineyard or cellar). Most wines are made with 100% whole bunches and aged in older oak barrels of all sizes. The wines are hand bottled without any fining or filtration.
Bottle Baby is the pairing of organically farmed apples from an orchard in Five Mile, Watsonville, CA and Phelan Farm Mondeuse grapes. These are co-fermented and aged in old wood barrels prior to bottling. The Mondeuse really shines here, offering beautiful dark fruit and a savory character, almost smoky. It finishes salty and vinous. A rather serious expression of cider.
