Redolent Wine is collaboration between Jon Larson and Boyd Pearson, neighbors who started their dream, Redolent, in 2015. Jon Larson takes the lead on the winemaking and Boyd takes the lead on sales. Aiming to abstain from intervening in this process both in the fermentation and aging of the wines, they are always looking to capture the true nature of the grapes, the place, and the vintage.
A single barrel of Waving Tree Rosé of Nebbiolo that sat on Chardonnay lees for 18 months, and it turned into something strange in the best possible way. It toes the line between rosé, red, and white, with real texture and depth.
Amaro-like herbs, cherry, red plum, and watermelon rind, with a tangy savory note. The palate brings watermelon, sour cherry, green apple pucker, dried apple chips, tomato leaf, and cracked black pepper. It shape-shifts, keeps moving, and refuses to sit still. Super limited and super fun.
