Winemaker Olivier Morin has a deep connection to the village of Citry le Fort. He is the latest in a long line of generations of his family to live and work in this small region just at the edge of Chablis. Morin’s great-great-grandfather built the home he lives in and his grandfather was the first in their family, and one of the first in Citry, to bottle their own wines. Today, Olivier Morin farms about 14 hectares of sustainably grown vines. The vineyards have been certified organic since 2022, but even before that Morin used natural grass cover, no herbicides, organic compost, and green harvests to ensure the best quality fruit. His cellar is half buried in the village hillside allowing Morin to operate with only gravity, no pumps needed.
Morin’s Aligoté is made from old vines planted by his parents in the 1970s. Fermented and aged in stainless steel, the wine spends one year on lees. Fruity and bright, this white shows notes of green apple, nectarine, and red grapefruit. The lees aging lends a pleasing texture and medium body. The wine finishes with a balanced acidity and gently salty minerality.
