75% Pinot Gris, Pinot Noir, and Pinot Blanc pomace with 25% Riesling juice
The base of the light sparkling wine is sourced from their 2021 Do Nothing, the 80% Pinot Noir and 20% Chardonnay chillable red. Piquettes are the new hot thing, loved for their low alcohol and crisp refreshing qualities. To create a Piquette the winemaker rehydrates the pomace (the leftover grape solids in winemaking) and in this case they throw in small amounts of Riesling and Gewürztraminer for extra acidity and aroma. They chaptalized the mix (a way of adding more sugar to balance the acid) with vegan, union made beet sugar and bottle while still a little sweet to create natural carbonation.
The resulting Piquette is light and easy going with gorgeous aromas and funky, fruit punch flavors. You might even get a hint of cranberry sauce and green peppercorns. This is the PERFECT poolside summer sparkler!
