Their vineyards sit on the best exposed terroir of pebbles, limestone and sand of the prestigious cru of Chateauneuf-du-Pape. The strict selection gives this great wine beautiful concentration and a rich symphony of aromatic notes.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eSustainable viticulture along with de-budding, de-leafing and green harvest limit the yield and increase the quality of this wine. Hand-picking, de-stemming and gentle crushing are followed by a controlled fermentation and a 3 to 4-week maceration. The wine is then aged in a blend of 100 year old large oak casks and new small French oak barrels for one year to develop its signature smoothness and richness of aromas and tannins.
