In 2018 Saleta Fernandez and her husband Jorge left their engineering jobs to continue the torch at her father’s winery, Adega Saíñas in Ribeira Sacra. They didn’t have much experience in winemaking, but definitely had the brains and dedication working this difficult and demanding terrain. Jorge had taken a deep dive into the vineyards, they knew these grapes had the potential to truly shine. In 2021, they brought on renowned winemaker Luis Seabra and he has been making the wines at Adega Saíñas ever since.
‘Silente’ is made from Mencía and Garnacha Tintorera manually harvested with careful selection of clusters in the vineyard and in the winery, fermented with indigenous and spontaneous malolactic yeasts The wine shows deep red color and bouquet of red fruits, spices and subtle mineral notes. On the palate, it is structured and balanced, with firm, elegant tannins and a long, persistent finish. Great with tapas, Spanish paella, a bbq of grilled sausages and peppers, and cheese such as feta, goat and manchego.
