Manuel Moraga is the 7th generation winemaker at Cacique Maravilla (aka “Magnificent Chief”), a winery with 250 year old vines who has always practiced natural winemaking. His family dates back to 1776 and carries with it the history of Spanish Conquest in Chile. They were the 33rd winery registered in Chile, a number you’ll actually find on all of their corks. Manuel still produces wine the same way with very little intervention, no fining or filtering and no irrigation. There’s so little pruning that happens that you can barely walk through the vineyard, much less get a tractor through it! He bottles this Pais just before fermentation is finished which gives the wine a slight fizz, the definition of the style of Pipeno.
