This sparkler is made in the Piquette style, produced by rehydrating the grape pomace (leftover grape goodness from other wine). The result is a low alcohol, very light sparkling wine. It's similar to re-using a tea bag--same flavor but lighter.
The winemaker definitely wants you to know that this wine is ALIVE so keep it very cold, very still (don't put it on the door of your fridge) and open it gently over the sink at a 45 degree angle. You can also open it in a bowl to catch the wine if it turns into a school volcano science project! Let it release some pressure before opening it all the way.
