Thomas Pico’s Pattes Loup (“wolf paws”) Chablis are so difficult to get in the US that we're incredibly excited to offer this wine to our 3 Parks fam! Thomas Pico started his tiny estate in Courgis in 2005, just outside of the village of Chablis, under the wings of his friends and fellow organic Chablisiens, Alice and Olivier de Moor. Pico has turned a historically produced but slightly uninspired winery into a sustainably, intentionally produced estate (against the wishes of his father) and has become a superstar in the region.
This Chablis offers laser-like focus, briny minerality and a freshness that only comes from hard work, dedication and transparency in the vineyard.
