Although Stéphane Moreau passed in 2016, his wife Virginie and assistant winemaker continue to honor Stéphane's winemaking style and technique. Stéphane, who was influenced by Vincent Dauvissat, produced bright, mineral driven, highly distictive style white Burgundies. A legend in his own right. The wines are made without intervention, using indigenous yeast, and are biodynamic and organic. Moreau-Naudet wines have tension, ripeness, vibrancy, and salinity - a true Kimmeridgean expression
Moreau-Naudet Chablis AOC is the only wine in the cellar that sees any new oak making it a richer, rounder style of Chablis.. Even so, it is always just a few new barrels that are being added to replace far older ones and constitute a small percentage of the final blend.
The vines of Chablis are located in a sedimentary basin. This low-lying zone, once under the ocean, was gradually covered by the material that today make up the soil and subsoil of the Chablis wine region. The subsoil in Chablis is known as Kimmeridgean.
