"P'tit Gaby" was the nickname of Laurent Clapier's great grandfather: Gabriel Théolas. Laurent Clapier is the 4th generation of the Clapier family to run the farm but the first to bottle commercially. He decided right away to farm organically, got his certification in 2004 and is now biodynamic as well. Laurent was also very lucky to take over an old quarry cave called "les caves cathedrals" in the village of Saint-Restitut and turn it into a cellar! The unique cellard is dug into chalky rock, a perfect environment for aging wine. The temperature is consistent all year round and is the coolest, most unique home for wines to age.
This is a great red to drink young to enjoy the fruit and spice it offers. Fresh cracked black pepper, plums, red fruits, subtle spice and shows finesse.
