The village of Sablet, just north of Gigondas, is known for its sandy soils. In fact, “sable” translates to “sand” in French. The appellation of Sablet shares similar soils, but unlike Gigondas they are permitted to grow/make white wines. Jean-Marc and his wife Sophie farm their 12.5 hectares in Sablet without the use of chemical fertilizers or sprays, they harvest and sort by hand, they ferment in cement tanks with native yeasts, and they bottle with minimal fining, filtration, or sulfur additions.
Aged in barrel on the lees for 12 months this blend is powerful and aromatic blend that has the perfect balance of attractive floral notes along with characteristic tropical and stone fruit flavors. There is lovely weight on the palate with richness, texture, candied fruit, exotic fruit, almonds and amazing freshness.
