Under the almost obsessive attention of winemaker Stephan Attmann, the Von Winning estate is producing some of the best dry wines in Germany. The estate holds some of the oldest parcels of vines in the Grosses Gewächs vineyards (top classified, think premier cru) scattered across the Pfalz region. Attmann’s experiences working with estates in the Cote d’Or, along with his boundless enthusiasm for winemaking inform his every decision. He describes his approach as “not doing the wrong thing at the wrong time.” The estate practices organic and sustainable viticulture, and all their wines are treated with a minimalist hand. The fruit for their Riesling Sekt comes from select vineyards around Deidesheim. The wine sees its first fermentation in stainless steel tanks, then a secondary fermentation in the bottle. It is left on the lees for 24-28 months to add body and texture.
Aromas of soft citrus and an elegant spiciness are the initial features of this bubbly. On the palate the wine is incredibly crisp and dry with flavors of bright lemon, ripe green apple, peach pit, and bracing sea salt minerality. The bubbles are tight yet buoyant, leading to a cheek-pinching, long lasting finish.
