Stirm’s ‘Calcite’ White Table Wine is named for the ancient type of limestone soil that makes up the predominant portion of the soils found in the Cienega Valley. Calcite soil is actually quite rare in the rest of California and that specificity is exactly what Stirm Wine Co. is all about. Winemaker Ryan Stirm strives to create wines that truly reflect their place and time. The fruit for this blend of Riesling and Chardonnay is sourced from three different vineyard sites in the Cienega Valley. The wine sees some lees contact and no oak aging. If you’re thinking that a blend of Riesling and Chardonnay isn’t for you, think twice! This wine is not your “typical” California white blend. You’ll get notes of yellow orchard fruits, white flowers, and honey, with plenty of acid to keep it fresh and minerality from that calcite to give it complexity.
