Cinzia and Fausto Cellario are 3rd generation winemakers, though the first in the family to make strictly natural wines. Poderi Cellario is in the village of Carru on the western edge of the Langhe. They work with only indigenous Piemontese grape varieties and fiercely defend local winemaking traditions in the vineyard and the cellar. The Cellario vineyards cover about 30 hectares across five different vineyard sites throughout the southern Langhe. Vineyard work is organic, fruit is hand-harvested, and all fermentations take place with indigenous yeasts. Sulfur is only added in very small quantities at bottling if necessary, which is fairly uncommon with a winery of this size.
La Grinozza is a crunchy and lively frizzante style red. Primary fermentation takes place in stainless steel and a secondary fermentation occurs in bottle. This playful, light-bodied wine is full character with flavors of strawberry, red cherry and ripe currant mingling with white pepper, cassis and baking spices. It’s super juicy with a pleasingly soft mousse. As we meander into spring, chill a bottle and take it with you for a picnic complete with a beet and ricotta salad, rotisserie chicken, a sun-dried tomato and arugula pasta salad, and angel food cake to finish!
