Perched atop the highest and northernmost part of the appellation, ran by Eric de Saint-Victor, is Chateau de Pibaron. Since 1975 Eric has been making noble wines from this unique Provence site. Chateau de Pibaron, found further down the Provençal slope, stands out from its other producers with soil composed of blue marl, limestone and some fossilized material. This distinct soil type strains the vines, ultimately causing the vines to channel all their resources into producing higher quality grapes.
Les Restanques is a vineyard planted on the hills. Wines from this vineyard represent the youth of Chateau de Pibarnon, lush texture and immediate drinkablity. Grapes are partially de-stemmed. Daily punching of the cap to extract the fine skin tannins slowly and thoroughly with temperature control to preserve the aromas of fresh berries. Aged for 18 months in oak.
