Patois is Patrick Collins and Danielle LeCompte. They run a very small operation out of Shenandoah County in Virginia. They source and forage all of their grapes - and in this case, apples.
Their work in the cellar is fairly oxidative, due partly to aesthetic aims and partly to minimal infrastructure. Everything is done by hand on a one or two person scale. While the ciders and wines will continue to evolve in the bottle upon release, they are not precious and are meant to be enjoyed.
Parrallel Voicing is light to medium bodied and dry with notes of bruised yellow apple, lemon citrus, and flowers, with medium acidity and a benchmark lactic note. Herbal, floral, and a touch savory.
