The soil in Christoph Hoch’s biodynamic vineyards is quite chalky, much like the soils of Champagne. Upon discovering this, he decided to try his hand at making a pet-nat sparkling wine. He went to France to study the art of sparkling wine with several notable winemakers, including Benoît Tarlant. Benoît made a bet with Christoph for 12 oak barrels that he couldn’t produce a stable pet-nat. After sampling Hoch’s first 12 bottles, Tarlant agreed he’d lost the bet and Hoch went to collect his barrels! “Kalk” refers to the chalky soil, while “spitz” refers to acidity. The wine is quite dry with a maximum alcohol of 11%. It has a fresh red fruit character, with savory green apple and grapefruit, refreshing acidity and creaminess on the palate.
Enjoy by itself as an aperitif or a meal of fresh seafood.
