Unlike the majority of the region, the Upper Mosel is all about limestone soils and the local grape, Elbling. This varietal has a long history dating back to the medieval times, if not earlier. Elbling is woven into the fabric of culture in this part of Germany. The style here is one of rigorous purity, vibrant energy, and simplicity, with a bracing and chalky acidity. Matthias Hild farms about six hectares in the sleepy town of Wincheringen and is a staunch supporter of this regional style. Vines for the Sekt (the German word for sparkling wine) are all grown within 4km of Wincheringen. After harvest the Sekt goes through a 21-day cold fermentation in stainless steel. Once malolactic fermentation has occurred, the wine is stored on its lees for 9-18 months until disgorgement. It does have residual sugar, which balances out the high acidity.
On the nose and palate: This high toned sparkling wine shows flavors of lemon skin, quince, ripe orchard fruit, and lots of minerality. It’s the perfect bottle to celebrate the start of Spring.
