Alice and Olivier de Moor are pioneers of natural winemaking in Burgundy, based in the village of Courgis, about 7km southwest of Chablis. Both trained enologists, they founded their estate in 1989 and have since expanded to farm approximately 7 to 9 hectares across the limestone-rich terroirs of Chablis, Chitry, and Saint-Bris. Their vineyards, which include prized heritage plots such as the "Plantation 1902" Aligoté, have been certified organic since 2005 and are managed with a deep commitment to biodiversity and regenerative practices, including manual harvesting and the use of "ecological corridors". In the cellar, the De Moors practice a philosophy characterized by minimal intervention, relying on gravity-fed movements, indigenous yeasts, and long aging in neutral oak or stainless steel without fining or filtration.
Sourced from organically farmed vines planted in the mid-1990s in the village of Chitry-le-Fort, the 2023 vintage is noted for being particularly strong, yielding wines that are textural, refined, and deeply mineral. On the nose, it offers a complex array of citrus fruits like tangerine and orange rind, intertwined with orchard fruits such as pear and green apple, and subtle hints of hazelnut or lanolin. The palate is characterized by high, vibrant acidity and a chalky, wet stone minerality, leading to a long, persistent finish.
