For more than four generations, the most important thing for the Mitjans family has been the care of their vineyards with the aim of achieving the best quality for their wines and cavas. The Grenache comes from the high-altitude area of Penedès, at over 700 meters above sea level, while the Xarello is sourced from the Can Mayol estate, at 250 meters of altitude. During the winemaking process, the grapes macerate with the skins for six hours to preserve the primary fruit aromas and prevent oxidation of the must. According to Greek mythology, Amalthea is the nymph represented as the goat that nursed Zeus. The goat, the horn, and the constellations form the foundation of biodynamic agriculture.
