Produced by the family-owned Paşaeli Winery, this wine is crafted as a fresh, fruit-forward tribute to the casual bistro culture of Istanbul. To preserve its natural acidity and pure fruit character, the grapes are typically harvested in the early morning and fermented at cool temperatures in stainless steel tanks, with no oak influence. The resulting profile is light to medium-bodied, featuring bright aromatics of citrus and stone fruit, followed by a crisp palate of green apple and a signature touch of saline minerality.
The wine's unique character comes from a thoughtful blend of indigenous and international grape varieties: Sultaniye, a native Turkish grape, provides delicate floral notes and a lift of freshness, while Sıdalan—a rare variety the winery has helped revive—contributes structure and mineral depth. The addition of Chardonnay lends necessary mid-palate weight and a subtle texture.
