Cinzia and Fausto Cellario are 3rd generation winemakers, though the first in the family to make strictly natural wines. Poderi Cellario is in the village of Carru on the western edge of the Langhe. They work with only indigenous Piemontese grape varieties and fiercely defend local winemaking traditions in the vineyard and the cellar. The Cellario vineyards cover about 30 hectares across five different vineyard sites throughout the southern Langhe. Vineyard work is organic, fruit is hand-harvested, and all fermentations take place with indigenous yeasts.
Carbonic maceration smooths out the acidity from the almost-ripe grapes, and this combined with the skin maceration gives a balanced, still-fruity, yet light wine.
“Bassissimo” in Italian means “very low” because of the very low alcohol level.
