Wavy Wines is a Los Angeles-based natural wine project founded in 2019 by friends Jude Zasadzki and Eliot Kessel. Operating as a "négoce" project, they do not own a single estate but instead partner with organic growers across Northern California. For the 2023 'LS Gris', they sourced fruit from notable sites including Evina Vineyards in Contra Costa, Shannon Ridge in Lake County, and Gamino Vineyards in Mendocino. Their philosophy focuses on "zero-zero" winemaking—utilizing native yeast fermentation and bottling without added sulfites, fining, or filtration—to produce approachable "vins de soif" meant for immediate, easy drinking.
The 2023 vintage is a skin-contact co-ferment consisting of an even split between 50% Pinot Gris and 50% Chardonnay. To achieve its signature orange hue and textured profile, the fruit undergoes roughly 14 to 21 days of skin maceration in stainless steel fermenters. After the skins are removed, the wine is aged in a combination of neutral oak barrels and stainless steel. This process extracts the pigment from the pink-skinned Pinot Gris and adds structural complexity while maintaining a low alcohol content of 11.5% ABV.
