Les Cassagnes means oak trees, referring to the green oak forest that surrounds the vineyards. The organic grapes are hand-harvested and sorted directly in the vineyard. The grapes are lightly crushed, and color and tannins are gently extracted with several daily pump overs of the tanks. Co-fermentation of the three varieties occurs over a long maceration of 3-4 weeks.
