Founded in 1816, Maison Jaffelin is one of Burgundy’s smallest yet most prestigious houses. Its history is deeply intertwined with the Collégiale Notre Dame de Beaune, as its ancient cellars once housed the wines of cardinals. Following a full restoration in 2004, the winery now combines historic charm with modern precision. At the helm is winemaker Marinette Garnier, a Burgundy native who honed her craft at legendary estates like Comtes Lafon and Méo-Camuzet. She focuses on terroir-driven purity, balancing the high energy of harvest with the quiet, contemplative aging process in the estate's historic Beaune cellars.
The house’s Chardonnay used in this crémant reflects this dedication to freshness and modern style. Hand-harvested and gently pressed, the wine is aged for 11 months in neutral oak to ensure the fruit remains the star. The result is a vibrant, light, and crisp profile that departs from the heavy, buttery styles of the past.
