Fossil & Fawn worked with a new site for this wine, a small property outside of Hillsboro. They used a blend varieties (referred to as a "field blend") from winemaker Jordan Whittington and sourced other grapes from another vineyard, jokingly called the Lents Monopole. It's bottled without fining or filtering (making it vegan) in October, allowed to ferment to dryness slowly over the winter and finally disgorged in January.
The resulting Pet Nat is a blast in a bottle with aromas and flavors of green apple, bergamot zest (Early Grey tea, anyone?) and grape Hi-Chew.
