Victoria is home to over twenty one wine subregions. Most of these regions enjoy warm summer days and cooler nights throughout the growing season. The abundance of lakes, billabongs, creeks and rivers that meander down from the Great Dividing Range in the east, create a vast array of micro-climates leading to unique layers of character in the wines grown here. Starting with their own meticulously grown vineyards in the Murray Darling, Zilzie’s Chief Winemaker Jonathan Creek focuses on creating fresh, luscious wines with structure and crisp acidity. Fruit for this bold wine was specially selected from parcels in the Zilzie vineyards as well as from long-term growing partners across Central Victoria.
This Cabernet’s structure is elegantly classic yet not overpowering, making it easy to enjoy. The palate is rich with layers of luscious blackcurrant, mulberry, and plum, and a smooth, lingering finish. The addition of a small portion of Merlot fills out the middle palate with a bit of spice and dark chocolate. Ten months of aging in French oak creates a balanced sweet and toasty finish.
