Château La Négly is located in Occitania, facing the Mediterranean Sea, in the Massif de La Clape, one of the sunniest places in France. La Clape, an ancient island that has been part of the continent since the 14th century, is a collection of soil on which each grape variety finds its happiness.
In the early 1990s, Jean Paux-Rosset and his wife inherited this family estate and completely transformed it in the decades that followed. Obtaining the HVE Level 3 they have converted to organic and sustainable farming practices.
Manual picking in crates at optimal maturity followed by grain sorting. Vinification in wooden vats for Syrah, in concrete vats for other grape varieties. Long vatting with daily manual punch-down. The nose combines aromas of raspberry and blackberry with notes of chocolate and black olives. The palate reveals aromas of licorice and roasted coffee. An exceptionally concentrated wine, with smooth, perfectly ripe tannins.
